About Aløft
Aløft is the gastronomic restaurant of co-owner and head chef Christian Ryan — opened in 2014 on the top floor of the Brooke Street Pier, the architecturally distinctive contemporary glass-and-steel waterfront pier on Franklin Wharf, halfway between the Salamanca heritage precinct and the Hobart CBD — and is the city's most reliable serious-tasting-menu kitchen. The dining room features full-height picture windows on three sides with a 270-degree view of the Derwent estuary, the Mt Wellington escarpment behind, and the working Hobart harbour directly below.
Ryan's cooking is contemporary pan-Asian with deep Tasmanian regional sourcing. The nine-course tasting menu rotates seasonally; signatures include a hand-cut Tasmanian salmon tartare with green tomato and Japanese ponzu; a slow-cooked Tasmanian wallaby with juniper jus and bush herbs; a hand-rolled tagliolino with Tasmanian black truffle and 36-month Parmigiano; a wood-fired Bass Strait octopus with green olive and lemon confit; the famous 'matcha cheesecake' for the dessert course.
The wine list runs to 600 references with deep Tasmanian smallholder coverage (Pooley, Tolpuddle, Domaine A, House of Arras), a serious mainland-Australian section, and a tightly chosen Champagne and Burgundy programme. Sommelier Anna Ferraro runs the floor and the pairing flight at A$120 is heavily Tasmanian-led.
The dining room holds sixty covers across twenty tables; the open kitchen is visible from every seat and Ryan himself walks the room before the cheese course. Service is precision — uniformed captains, choreographed plate-arrival, exact pacing.
