The Restaurant

In the tree-lined residential streets of Thao Dien — Saigon’s most European neighbourhood — Chef Thierry Mounon and his wife Tina have created something that feels less like a restaurant and more like a private residency opened to those who know to ask. La Villa sits behind high garden walls, accessed through a gate that leads into a world of red velvet curtains, original artwork, a stunning chandelier casting warm light across tables set with the kind of precision that takes a brigade years to perfect.

Chef Mounon is a former five-star hotel chef who arrived in Vietnam and made a decision that more fine dining chefs should make: he stayed. The menu reads like a love letter to classical French gastronomy — duck foie gras with brioche and fig chutney, pâté en croûte served tableside with cornichons, lobster à l’américaine with its vivid bisque sauce that takes three days to prepare, and at the end of the meal, the Grand Marnier soufflé, which is ordered at the beginning and arrives precisely when it should. It is one of the finest soufflés in Southeast Asia. No hyperbole.

The wine cellar — visible through glass panels — houses a collection selected for classical French pairings. Burgundy with the duck. Bordeaux with the beef. The sommelier, one of the most knowledgeable in Ho Chi Minh City, will steer you correctly without ever making you feel outmanoeuvred. Service at La Villa operates at a level that the city’s newer, trendier restaurants can imitate but rarely reach: professional, warm, completely invisible until needed, and then precisely present.
