The menu reads like a love letter to classical French gastronomy — duck foie gras with brioche and fig chutney, pâté en croûte served tableside with cornichons, lobster à l’américaine with its vivid bisque sauce that takes three days to prepare, and at the end of the meal, the Grand Marnier soufflé, which is ordered at the beginning and arrives precisely when it should.
