About Sushi Ichi
Sushi Ichi has operated for over fifty years on this Yobaicho address south-west of Himeji Castle. The restaurant is run by the second-generation chef, who took over from his father in 1998 and has steadily refined the menu since. The Michelin Guide Hyogo edition has listed Sushi Ichi continuously since the guide's first regional Japan publication in 2016.
The signature dish is the natural-anago shari — a Seto Inland Sea conger eel preparation that the kitchen has codified into three forms: a steamed white-anago (shiraani), a charcoal-grilled anago with house tsume reduction, and an anago-don in the lunch service. The restaurant works only with wild-caught Seto fish (no farmed product), which means the menu shifts seasonally and the chef will redirect orders during off-seasons.
Lunch sets run ¥3,800-7,000 and are the best-priced way to use the room as a tourist; the dinner omakase is ¥18,000-22,000 and includes the full kaiseki-and-sushi sequence. Reservations are taken by phone in Japanese a week or two ahead; the front-of-house manager speaks basic English and will accommodate non-Japanese-speaking guests with a printed English menu of the day's catch.
The room is plain — pale-grain hinoki counter, traditional Japanese ceramics, a single ikebana — and seats nine at the counter plus a private tatami room for parties of four. Service is in the older formal Japanese style; the chef's narration is unhurried and the meal proceeds slowly. For a Hyogo coastal sushi experience without the cost of an Osaka fine-dining counter, this is the prefecture's clearest answer.

For closing-the-deal dinners with senior Japanese clients the room's regional-pedigree story flatters the guest in the right way — a Michelin-listed local kitchen working with wild-caught local ingredients reads correctly. Solo travellers fit the lunch service; the ¥3,800 anago-don is one of Hyogo's underpriced fine-dining experiences.
