Anthony's Prime Steak & Seafood occupies the corner of the M Resort & Casino at the southern edge of the Las Vegas Strip — twelve miles south of the Bellagio and the city's first serious dining destination on the way back from any Henderson business meeting. The dining room is a glass-walled exhibition format with the open kitchen as the room's visual centre, lit-from-below quartz tables, a black-leather banquette wall, and a long outdoor patio that opens for dinner service April through October with a clear sight line to the Las Vegas Strip's skyline. About 120 covers across the main room and the patio.
The kitchen is led by executive chef Aaron Wilson and runs an unambiguously prime-beef-and-Pacific-seafood format. Hand-selected USDA Prime cuts (the bone-in 24-oz ribeye, the porterhouse, a 6-oz Wagyu filet); fresh seafood flown in daily from the Pacific (live Maine lobster, Alaskan king crab, the chef's signature Chilean sea bass with sake glaze); and a tableside Caesar prepared in the room that has been on the menu since the restaurant opened with the resort in 2008. The Sunday brunch ($100 per person) runs a serious buffet anchored by a carving station, an omelette station, and a king-crab leg display.
The wine list is the room's headline programme — about 450 references organised by region with a particular Napa Cabernet anchor, a deep Italian Tuscan reserve section, and one of the most thoughtful Spanish Rioja selections in southern Nevada. The list has held a Wine Spectator Award of Excellence for nearly every year since 2010. Service runs at the resort-casino senior standard — fast, polished, English-fluent — and the room handles corporate-dinner parties of eight to twenty in its semi-private alcove with no friction. For a serious dinner in Greater Las Vegas with a credible Strip-skyline view, Anthony's is the most-considered answer south of the airport.
