About 100/200 Kitchen

100/200 Kitchen is one of the most radical Michelin restaurants in Germany. Thomas Imbusch opened it in 2018 in a converted loft in Billbrook — an industrial district east of central Hamburg that the 100/200 team chose specifically because it is not the HafenCity. The entire operation runs at one counter, sixteen seats, facing an open wood-fired hearth and a single pass. The name ('100/200') refers to the temperatures that Imbusch cooks across — 100 degrees Celsius for slow work, 200 for direct-flame — and the kitchen uses no gas, no induction, no electric.

The menu is a single tasting, 7 to 9 courses at €240-€280, rotating weekly and built exclusively from producers within 200 kilometres of Hamburg. Imbusch's sourcing is probably the most disciplined in Germany: a 16-hectare farm in Schleswig-Holstein supplies the bulk of the vegetables and grains; fish comes from named small-boat fishermen in Königsseee, Fehmarn, and the North Frisian coast; the meat programme is three named farms. Dishes are structurally simple and ingredient-driven — a fire-roasted celeriac with a lovage oil and sheep-milk crème; a slow-braised North Sea cod with fermented tomato and samphire; a dry-aged Blässschaf lamb with wild herbs — but the sourcing and the fire work combine into a cuisine that Michelin called 'one of the most distinct in Europe'.

The two Michelin stars arrived in 2022. Service is minimal but warm; Imbusch works the pass and occasionally plates in front of the guest. The wine list is unusual — almost entirely European natural wine, heavy on Franconian Silvaner and Mosel Riesling, with a Georgian and Austrian orange-wine selection. A solo diner at the counter is the format the restaurant is designed for. 100/200 is the most modern two-star experience in Hamburg and one of the most original in the country.

For Close a Deal: 100/200 Kitchen's 16-seat open-fire counter is unusually intimate for a deal dinner, and the fact that the menu is a single shared tasting removes the friction of ordering. The conversation around Imbusch's 100-kilometre sourcing (of which any business partner will have opinions) is a built-in deal-dinner conversation piece. The €240 tasting is at a lower price point than The Table or Haerlin, which may be the right signal — serious but not ostentatious.
