Seehotel Grüner Baum sits on the Marktplatz directly opposite Seewirt Zauner, with a twin lakeside orientation and a long 19th-century history: the Austrian Empress Elisabeth (Sisi) stayed here in 1876, and Frederick Chopin boarded in the property earlier, during an 1829 Salzkammergut concert tour. The hotel is a 21-room four-star operation with the main dining room downstairs facing the lake and a terrace of twenty covers set directly above the water.
The cooking is modern-Austrian hotel fine dining — a slightly more technically ambitious kitchen than the traditional taverns on either side. Cured lake-trout with horseradish crème fraîche and dill oil opens the signature menu; a Salzkammergut lamb with wild herbs and polenta is the spring-summer main; Austrian beef Tafelspitz or Dachstein venison (autumn) close the Austrian-classical end. The pastry programme is one of the best in the village — the Apfelstrudel is the textbook version, the Salzburger Nockerl (a soufflé-like Alpine dessert) is worth ordering for two.
Service is formal without intimidation, the wine list spans Austrian and international producers more broadly than most of the village, and the hotel's front-of-house English is fluent. The lakeside terrace is the right First Date seating in summer (15 two-tops, all water-facing). The indoor dining room with its 19th-century painted ceiling is the correct winter alternative. Grüner Baum is the Hallstatt restaurant most comfortable for a medium-formal evening.

The menu is safe for most preferences; the bill sits at a comfortable €50-€85 per head; and the walk out to the Marktplatz after dinner is the entire village in miniature. It is the best Hallstatt first-date choice.
