About Uni Murakami Hakodate

Uni Murakami is the gateway restaurant of the Hakodate morning market — the first stall on your right as you enter the Asaichi from Wakamatsu-dori — and is run by the Murakami family, who have processed sea urchin in Hakodate for four generations. The Michelin Guide's Hokkaido edition (2017) recognised the room for the quality of its uni and the discipline of its preparation. The recognition has held.

The menu is uni-centric in a way no other restaurant in Japan attempts: a forty-piece sashimi platter using only that day's catch, separated by source bay (Kombu-jime, Esan, Yagishiri); a uni-don topped with two hundred grams of raw sea urchin over warm rice; a uni-ikura-don for travellers who can't choose; an uni shabu-shabu in winter; a uni-roe pasta crossover that the kitchen invented in the late 2000s. Pricing runs ¥3,800 (the standard don) to ¥9,500 (the four-bay sashimi flight).

What makes Uni Murakami a Hakodate destination rather than just a market stall is the quality control: the Murakami family processes the sea urchin in their own facility behind the restaurant rather than buying through wholesalers, which means the gonad is exposed to seawater for less than ninety minutes before serving. The difference between this uni and even good Tokyo uni is genuinely visible — denser, sweeter, less briny.

The room is plain, functional, market-style — twenty seats at three long tables, no tablecloths, plastic-laminated menus in five languages. Service is fast; the meal lands in twenty minutes. The signage is in English, Korean and Mandarin; the staff speak basic English. Open 9am-2pm only — this is breakfast and lunch, not dinner.
