About Sushi Tatsumi
Sushi Tatsumi is the address that Hakodate's tourism board doesn't print. Twelve seats at a hinoki counter in a Goryokaku-area side street, run by a chef who trained at a Sapporo two-star room before opening his own counter in 2011. The omakase is one length — twenty pieces — and the ingredients are sourced personally each morning from the Hakodate central wholesale market, four blocks west.
The technique is Edomae proper. The maguro is aged seventy-two hours and brushed with a house nikiri; the kohada is salt-and-vinegar cured for ninety minutes; the anago is simmered and brushed with a tsume that the chef has kept in continuous use since opening. What separates Tatsumi from Tokyo equivalents is the access to Hokkaido-specific seafood that no Tokyo chef can match — Esan uni, Funka Bay scallop, Hakodate squid in autumn, Donan ikura in October — and the unhurried way the chef serves them.
Reservations are taken by phone in Japanese, three weeks ahead for weekends. Hotel concierges (the Wing International, the La Vista, the Loisir) can book on your behalf; this is the simplest path for non-Japanese-speakers. The omakase runs ¥28,000 weeknights; ¥34,000 with a five-glass sake pairing built around Hokkaido and Niigata producers.
The room is austere — pale-grain hinoki, a single ikebana, a low pendant — and the meal proceeds in measured quiet. The chef speaks limited but functional English; he will narrate each piece on request and adjust pacing if the table is conversational. For a sushi room outside the Tokyo-Osaka-Kyoto axis that genuinely operates at top-tier quality, Tatsumi is one of the country's clearest examples.
Best Occasion Fit
For a marriage proposal in Hakodate, request the corner seat (counter ends are quietest), arrive at 5:30, and tell the chef in advance — he will pace the meal to the moment. For senior client entertaining the counter format and the Hokkaido-ingredient story flatter the guest in a way that travel-distance from Tokyo can't undo. Solo travellers who can secure the booking will eat one of the meals of their year.
