About Eichhalde
Eichhalde is a Herdern hill-side restaurant that the city uses for its best sunset dinners. It sits above the altstadt, in a terrace-and-dining-room building that has the line of sight across Freiburg's roofs toward the Kaiserstuhl ridge — the volcanic hills that produce much of Baden's best wine. The view is worth the cab on its own.
The cooking is Alemannic-modern — regional sourcing, lighter technique, a menu that changes more often than a classical Baden dining room would. A starter built around a Kaiserstuhl asparagus in season. A fish course using a Black Forest trout. A venison preparation in autumn that takes the regional hunting tradition and plates it for a modern dining room.
The wine list leans — unsurprisingly — into Kaiserstuhl and Markgräflerland producers. For a table that wants to drink its way through Baden's terroir without leaving Freiburg, the list is the easiest route.
