The Regional occupies a corner of South Mason Street that most cities would reserve for something less interesting. Instead, Fort Collins got a family-owned, from-scratch kitchen that has quietly become the place chefs and restaurant people go on their own nights off. Every component is made in-house, every sauce is built from the ground up, and the seasonal menu moves with what's actually coming out of the farms and docks the restaurant trusts. This is the unglamorous work that defines genuinely good American cooking, and the Regional has been doing it without fanfare since 2018.

The raw bar is a minor miracle. Colorado is a landlocked state, but the oysters arrive on the half shell with the kind of briny clarity you would expect in a coastal city. Chowda Mussels, properly sauced, are a reliable opener. The lamb meatballs have developed a devoted following — rich, long-braised, served on a base that changes with the season but always rewards a hunk of the house bread. The Reggie Beef Burger is the best burger in Old Town and has held that title against significant competition.

What makes the Regional work for groups is the Thursday chef's special: a three-course prix fixe that moves from an inspired appetizer through a main and a dessert for a price that barely covers the ingredient cost at a comparable restaurant. This is where regulars bring visiting friends. This is also where the kitchen takes its biggest swings — genuinely inventive plates that reward paying attention.

The room itself is warm and loud in the right proportions. Exposed brick, an open kitchen you can glimpse from the right seat, and a bar that draws its own crowd of locals. It is not trying to be a special-occasion restaurant, which is precisely why it works for so many occasions. You can bring the team here on a Wednesday and it feels celebratory. You can bring your parents on a Saturday and it feels grown-up. You can eat at the bar alone with a book and feel completely welcome.

What to Order at the Regional

Start with the oysters and the Chowda Mussels to test the kitchen's fish program. Split the lamb meatballs. If it's Thursday, order the chef's special without looking at the rest of the menu — you will eat better than anyone else in Old Town for the next ninety minutes. The Gluten Free Fried Chicken Sandwich is one of the two or three best versions of that dish in Northern Colorado. For dessert, whatever is being baked that day.
