About Josephine's Modern American Bistro

Josephine's opened in June 2002 in the John Milton Clarke House, a 1911 craftsman home on the National Register of Historic Places a few blocks from downtown Flagstaff. Siblings Tony and Jill Cosentino named it for their late mother, Josephine, and chef Tony Cosentino still runs the kitchen.

The cooking is modern American and resolutely seasonal, and the wine programme has held a Wine Spectator Award of Excellence for years running.

The Kitchen

Chef Tony Cosentino rewrites the menu around the season's best produce and seafood. The dishes guests return for are the Diablo Shrimp, the Chicken Saltimbocca and the mac and cheese, and the kitchen accommodates vegetarian and gluten-free diners without an afterthought, cooking without refined or processed oils. The award-winning wine list is built for pairing.

The historic house gives the room its character — warm interiors with two fireplaces, plus a garden patio for warmer evenings. It reads as intimate and grown-up rather than buzzy, well suited to conversation.
