Setzkasten lives inside a wine merchant's shop, which tells you most of what you need to know about its priorities. Twelve seats. One sitting. A tasting menu that changes every few weeks around whatever Daniel Dal-Ben has sourced from his network of fishermen, small-holders, and single-estate farms. The wine list is the one advantage of being inside a wine shop: it is, effectively, the whole cellar.

Dal-Ben cooks in a clean, ingredient-forward idiom that owes as much to Italian restraint as to French technique. A crudo that is allowed to be mostly fish. A pasta course made within the meal, not brought in. A venison preparation in season that is plated with the confidence of a kitchen that trusts its sourcing.

The room has the scale of a dinner party — twelve chairs, a single long table at the bar, enough intimacy that the sommelier can actually have a conversation with each table rather than deliver the same script eight times. The pacing is slow in the best sense: this is a three-hour meal designed for a date or a board-level conversation, not a midweek drop-in.

What it lacks in theatrical ambience it makes up for in quiet confidence. Setzkasten does not want to be the biggest dining room in Düsseldorf. It wants to be the most precise one, and on most nights it is.

For a proposal, the twelve-seat scale is intimate without feeling forced. For a deal, the tasting format buys three hours of undivided conversation. For a first date, the shared ingredient-led menu gives both parties something beyond small talk from the first course onward. Very few rooms do all three this well.
