Niko Romito is one of the most rigorous thinkers in contemporary Italian cuisine. His three-Michelin-starred Reale in Castel di Sangro is a pilgrimage destination for anyone who takes Italian gastronomy seriously — and what he has built at the Bulgari Resort Dubai, three stars aside, belongs in the same conversation. This Dubai outpost, helmed day-to-day by the exceptional Chef Giacomo Amicucci, has held two Michelin stars since the inaugural Dubai Guide in 2022, making it one of the most consistently decorated Italian restaurants in the world outside Italy itself.

The setting is arresting. A dramatic ceiling of pure black lacquer descends over the dining room like a night sky rendered in obsidian. Raised banquettes and low-lit tables face floor-to-ceiling glass, beyond which the Arabian Gulf unfolds in every direction. Jumeira Bay Island juts into the sea and the restaurant sits at its tip — on a clear evening, the view encompasses the Burj Al Arab to the south and the city's glittering marina districts to the north. An agnolotti of ricotta and aged pecorino arrives with a pool of clarified butter so pure it reads almost as a concept. These are dishes that could exist nowhere but Italy — yet they are being cooked better here, in Dubai, than in most restaurants in Rome. The menu is priced at the upper register of the Dubai market, but represents genuine value for the level of execution on the plate.
