About La Maison des Cariatides

La Maison des Cariatides occupies a 17th-century Dijon town house on Rue Chaudronnerie, in the Ducal quarter two streets north of the Palais des Ducs. The building takes its name from the pair of caryatid sculptures flanking the original façade — a listed architectural detail that the restaurant has preserved throughout its interior renovation.

Chef Thomas Collomb opened the restaurant in 2015 and earned its first Michelin star in the 2024 Guide — retained in 2025 and 2026. Collomb cooks a precise modern French menu built around garden-led produce, freshwater fish from the Tille and the Vouge, and an unusual number of fermentation and pickle preparations.

The restaurant offers three menu formats: a three-course lunch at €58, a five-course tasting at €95, and a seven-course extended tasting at €145. Signature work rotates seasonally but includes a signature beetroot tartare with Fourme d'Ambert, a pike-perch with beurre blanc Chablis, and a duck breast with seasonal condiments.

The dining room seats 38 — split between a ground-floor stone-walled room and a first-floor salon with restored 17th-century mouldings. The first-floor room holds six two-tops and is the intimate-dining choice; the ground floor is the better acoustic for business or birthday parties.
