About De Centrale

De Centrale sits on Beestenmarkt, one of Delft's triangular squares five minutes' walk north of the Markt. The restaurant opened in 2014 in a converted 19th-century bank building — the original marble floor, oak-panelled vault room, and a high cast-iron ceiling have been preserved, and the main dining room runs through what was once the banking hall.

The kitchen offers a single format — a five-course tasting menu at €75 with an optional extended seven-course at €95. The menu changes with the season (March, June, September, December) and is built around North Sea fish, Limburg game in autumn, and an unusually strong vegetarian parallel track.

The wine list is the hidden strength of the restaurant — more than 180 bottles, with serious depth in Burgundy (particularly Chassagne-Montrachet and the Côte de Nuits village wines) and a small but thoughtful Rhône section. Pairings run at €55 (standard) and €110 (premium, heavy on Grand Cru Burgundy).

Service is from Tuesday to Saturday evenings and Saturday lunch. The restaurant seats 56 across the main hall and a smaller private room (12 seats) upstairs in the former vault. The private room is bookable for €150 above the menu cost.
