About Charcoal

Charcoal opened in 2018 on Oude Delft, the city's primary canal, in a restored 18th-century merchant house. The operating concept is built around a central wood-fire grill and a glass-walled dry-ageing room visible from the dining floor — both the primary cooking method and the primary storytelling device.

The menu is built around five cuts of ageing beef (rotating through Black Angus, Limousin, Dutch-reared Wagyu, and a smaller German simmental programme), a handful of fish cuts cooked over the same fire, and an extensive vegetable section designed around the grill's residual heat. Starters run €14-22; mains €32-58 depending on the cut.

Wine is built for grilled food — a 150-bottle list heavy on Rhône, Rioja, Piedmont, and Argentine Malbec, with a small Burgundy section for lighter fish dishes. The sommelier handles pairings per dish rather than per course, which works well with the grill-led menu.

The dining room seats 55 across two levels, with the ground-floor room facing the Oude Delft canal and the first floor looking onto an interior courtyard. The private Charcoal Lab in the basement (12 seats around the grill with the chef cooking directly in front of the table) is the best group-dining format in the city.

Why It's Perfect for Close a Deal

Charcoal is the Delft business-dinner and team-dinner restaurant for carnivorous groups. The grill-led menu gives mixed groups a clear ordering structure; the dry-ageing-room visibility is a built-in conversation starter; and the Charcoal Lab basement private room handles parties of 10-12 with a dedicated chef. For birthdays, the 55-seat main room handles larger celebrations better than most Delft addresses.
