The Restaurant

The White Bull opened in 2018 at 123 East Court Square, on the south side of the Decatur Square, in a corner storefront with a long bar room facing the street and a small main dining room behind. The project of chef-owner Pat Pascarella — a New-Jersey-raised cook trained through Atlanta's Italian-American school and a working presence on the Atlanta Magazine and AJC critic lists for a decade — was built around a single working idea: house-milled grain. The mill, set in a back-of-house pasta laboratory behind a glass-front service window, grinds heritage red-fife wheat and rye into flour the morning of service, and the bread and pasta programme runs on the day's grind rather than dry-stock flour.

The kitchen reads as a working Italian-American menu interpreted through farm-to-table technique. The antipasti programme includes a daily crudo plate, a house-cured charcuterie board with Calabrian salumi, a bread service with the morning's loaf and house-cultured butter, and a marinated-olive plate. The pasta menu — the room's defining course — runs about ten preparations: cacio e pepe with hand-cut tonnarelli, a daily ravioli with brown-butter, a rigatoni amatriciana, a bucatini cacio con pepe, a pappardelle with rabbit ragù, and a rotating laminated lasagne that the regulars order by name. The wood-fired-oven pizza programme — five pies built on a sourdough crust laminated with house-milled flour — runs alongside the pasta service through the dinner.

The secondi list is shorter and seasonal — a daily Mediterranean whole fish, a wood-fired pork chop with peperonata, a Bell & Evans chicken under a brick — and the dolci board carries an olive-oil cake that has become the kitchen's most-photographed plate. The wine programme runs about two hundred labels organised by Italian region, with proper depth in Etna Rosso, Brunello, and a small Piedmont and Champagne section. The bar runs amari and Negronis. Service is paced for the menu and the captains work the room. The Michelin Guide listing in the inaugural Atlanta edition confirmed what AJC critics had argued: this is the Italian programme that has carried Decatur's restaurant identity past the suburb's family-italian defaults.

The White Bull is the deal-closing answer for the eastside of Atlanta because the room is calm enough for a real conversation and the cooking is serious enough for the gesture. The main dining room is small — about fifty covers — and the back banquettes give each side of a negotiation the privacy the format requires. The house-milled-grain story is the working detail that a client with an interest in food culture appreciates, and the Michelin listing removes the question of whether the room can carry the evening. The pasta menu is shareable in the right way and the wine list runs deep enough in Italian to make a careful gesture. And the Decatur Square location — six miles east of downtown Atlanta — reads as informed rather than convenient.
