About Stüva
Stüva is the gastronomic restaurant of the Hotel Walserhof — a Relais & Châteaux property on the Promenade in Davos Dorf, opened in the 1960s by the Bachofen family and currently in second-generation ownership — and is the most reliable classic Graubündner dining room in Davos. The dining room occupies the original 17th-century Walser-stube — hand-carved larch panels, the Kachelofen stove that has run for two centuries, copper-bottom pans hung from the rafters, and forty-eight covers across two stone-walled rooms.
The cuisine is recognisably Bündner — Graubündner Capuns with Beaufort cream and chard; hand-rolled pizokel pasta with mountain cheese and brown butter; slow-roasted Bündner Steinbock haunch with juniper jus and red-cabbage purée; a smoked Davos char with horseradish butter; the famous 'Bündner Nusstorte' — the regional walnut tart that the pastry team has refined for decades. There is also a strong vegetarian section that the kitchen has built since 2018.
The wine list is one of the deepest Bündner cellars in any Davos restaurant — 800 references with serious depth on Bündner Herrschaft Pinot Noir (the Gantenbein, Donatsch, Liesch and Adank cult bottlings), a respectable Engadin section, and a tightly chosen Italian Alpine programme. Glass pours start at CHF 12 and the by-the-glass programme is the most generous Pinot Noir flight in the village.
Service is family-run and Bündner-warm — the Bachofen siblings rotate the floor, the captain has worked the property for two decades, and the kitchen pacing is leisurely. Stüva is also the most reliable mid-tier client-entertaining address in Davos — the room is good enough to take a senior visitor and the cooking never overreaches. It is the dining room that visiting WEF delegates, Bündner farming families, and Zürich-based weekenders all use as a default dinner address.
Why It's Perfect for First Date
Stüva is the easy-first-date room in Davos — quieter than Glow, less formal than Seehof, and chef-driven enough to be a meaningful conversation starter. The Bündner-stube room is the most romantic dining environment in the resort and the regional Pinot Noir flight is genuinely interesting wine-led conversation. Book the corner four-top by the Kachelofen stove for the room's most private setting.
