About Seehof Davos

The gastronomic restaurant of the Hotel Seehof Davos — a Belle Époque five-star property on the Promenade in Davos Dorf, opened in 1869 and currently in fourth-generation Wohlwend-family ownership — holds one Michelin star under chef Markus Schneider. The hotel itself overlooks the Davosersee (the lake at the head of the Landwasser valley) and the dining room is the most architecturally distinctive in the village — original 1869 hand-painted ceiling boards, a hand-blown Murano chandelier from the 1920s, and twenty-eight covers across nine tables.

Schneider's cuisine is contemporary French-Alpine with deep regional sourcing. The seven-course tasting rotates seasonally; signatures include a hand-cut Engadin char tartare with horseradish butter and Bündner caviar; a slow-roasted Davos lamb shoulder with thyme and Mondeuse-fermented black truffle; a smoked Lake Davos fera with green tomato confit; the famous 'Bündner Capuns' — a Graubündner herb-dumpling with Beaufort cheese cream that has been on the menu for a decade and is the canonical Bündner dish.

The wine list runs to 900 references with a serious Burgundy spine, deep verticals of Bündner Herrschaft (the local Pinot Noir region — Gantenbein, Donatsch, Liesch — that no other Davos cellar carries in the same depth), and a Champagne section that runs to grower-producers. Sommelier Reto Zellweger runs the floor and the pairing flight at CHF 130 is the most distinctive wine match in any Davos one-star room.

The dining room holds twenty-eight covers — wood-panelled, low-amber-pendant lit, with a wall of glass facing the lake — and the kitchen pacing is leisurely. Service is family-run and Bündner-warm — the Wohlwend siblings rotate the floor, the captain has worked the property since 1996, and the kitchen runs without watching the clock. The hotel itself is sixty rooms; most diners stay overnight which means the kitchen is a stay-and-eat affair rather than a public-traffic destination.

Seehof Davos is the proposal-grade table for a Davos week — the twenty-eight-cover Belle Époque room is intimate enough for total privacy, the lake-facing window seat is among the most photographed dinner views in eastern Switzerland, and the seven-course pacing is unhurried.
