The Room

Sonargaon is the signature dining room of the Taj Chia Kutir Resort & Spa on the Makaibari Tea Estate in Kurseong, forty minutes south of Darjeeling proper. The hotel opened in 2019 and immediately became the benchmark for Himalayan luxury dining. Sonargaon's room is panelled in dark tea-estate hardwood, set with Taj-brand silver and crystal, and arranged around picture windows that face Kanchenjunga — when the mountain is clear, the view at breakfast and at sunset is among the finest in India.

The menu is a regional Indian fine-dining tour — dishes from Bengal, Nepal, Sikkim, and wider Eastern India, plated with the technical confidence of the Taj brigade. Signatures include the Makaibari tea-smoked lamb, the Bengali dak bungalow chicken, the Himalayan trout with mountain-herb crust, and a tasting of Darjeeling-region teas paired with each course. The restaurant was among the earliest in India to take tea-pairing seriously as a fine-dining discipline.

The wine list is French- and Italian-led, with a small but serious Indian wine section (Sula, Fratelli, Grover Zampa). The tea list is the more interesting document — a dozen first-flush and second-flush Darjeeling teas, served in single-estate flights, with the sommelier-trained tea master pouring in the room.

Prices run ₹5,500 to ₹7,500 per head with wine; considerably less with the tea pairing, which is the more locally authentic choice. Reservations are essential and fill especially tight in April-May (first-flush season) and October-November (mountain-clear season). Book via Taj's central reservations.
