About Le Sylvestre

Le Sylvestre is the gastronomic flagship of Les Airelles — the toy-castle palace hotel at the heart of the Jardin Alpin and the address that, more than any other in Courchevel, stages the resort's aesthetic. The dining room is ballroom-scale: tapestry-padded walls, gilded console tables, suspended Venetian-glass fixtures, and an open fire at the far end of the room that runs through the season.

Chef Sylvestre Wahid took the kitchen in 2018, brought the second Michelin star within twelve months, and runs a menu that is more contemporary than the room would suggest. Signatures include a hand-line-caught langoustine with kombu and a yuzu-cream beurre blanc; Bresse pigeon with mole and corn polenta from a Mexican farmer Wahid sources directly; a slow-roasted Parisien turbot with Champagne-fermented turnip, and a hot Grand Marnier soufflé built on a 1958 recipe from the family's previous restaurant in Lyon.

Service is at the absolute upper end of European fine dining: the maître d'hôtel team rotates through the Plaza Athénée and the Bristol in summer; the captain's eye-contact with the kitchen is choreographed to within seconds. The wine list is one of the deepest in the French Alps — 1,200 references, including a thirty-vintage vertical of Domaine Romanée-Conti that the hotel quietly maintains.

Two seatings a night in season, one in shoulder. The room never feels rushed. Bookings open in September and the prime tables along the window are spoken for within the first week. This is the most theatrical fine-dining room in Courchevel and arguably in the entire Alps.

Le Sylvestre is the impress-the-client room when the room itself has to do half the work. Few dining halls anywhere in Europe match this one for sheer presence — a senior visitor will remember the building before they remember the meal, and that is exactly the right answer. Brief the maître d' for a window table; arrange a private pre-dinner Champagne in the adjacent salon; let the room do the talking.
