Bybrook at The Manor House

Bybrook has held a Michelin star continuously since 2017. Head chef Robert Potter, who joined in 2020 from Lime Wood in the New Forest, has retained the star every year through 2026. The restaurant sits inside The Manor House Hotel in Castle Combe — a 14th-century estate often cited as the prettiest village in England.

The dining room occupies the original oak-panelled Great Hall of the Manor House. High curved ceilings, a stone fireplace, floor-to-ceiling leaded windows overlooking the Bybrook river (the restaurant's namesake). The 36-seat room is one of the largest Michelin-starred dining rooms in the region — a format advantage for larger business parties and extended celebrations.

The menu runs as a seven-course seasonal tasting at £130 (the best value among the Cotswolds stars) with an eight-course chef's selection at £170. The kitchen's signature work is around estate game (Castle Combe has its own shoot) and Welsh mountain lamb. Pairings are £85 standard or £145 premium.

The Manor House has 50 rooms, which makes Bybrook bookable as a stay-and-dine package at rates that undercut most of the other Cotswolds starred hotels. The restaurant also offers a three-course Sunday lunch at £65 — the weekly value opportunity.

Bybrook is the Cotswolds business-dinner restaurant. The 36-seat format means a party of six does not feel cramped; the private Bybrook room (separately staffed, seating 14) handles larger boards. The Manor House's 50 rooms make it the region's easiest overnight-and-dinner booking — clients flying into Bristol or Heathrow can be inside the dining room within 90 minutes of landing.
