Noma, long ranked the world's best restaurant, is entering a new chapter. René Redzepi has stepped back from daily service to lead Noma's creative and research projects, with a leadership team running the kitchen, and the organisation has signalled limited restaurant openings and projects beginning around 2027 alongside its food-research work.
Few things in fine dining are more anticipated than Noma's next form. Whatever Redzepi's team launches from 2027 will be among the most scrutinised projects in the world.
