About Covino

Covino opened on Northgate Street in 2019 and has been the city's natural-wine and small-plates anchor since. The room is narrow and warm — exposed brick, dim industrial pendants, a 14-seat bar counter facing an open pass, eight two-tops along the wall — and the format is European wine-bar crossed with British seasonal small-plates. It is the Chester restaurant that most closely resembles a Copenhagen natural-wine bar.

The menu is 15 small plates (£7–18 each) and changes every three weeks. Typical dishes include a raw beef sirloin with preserved lemon and aged pecorino; a braised pig's head croquette with house-pickled mustard seed; charred hispi cabbage with anchovy mayonnaise and breadcrumbs; and a chickpea-panisse with whipped cod's roe that has been on the menu since opening. The kitchen runs with a three-person brigade and the pass is two metres from the bar counter.

The wine list is where Covino earns its Michelin Guide mention — 60 labels, entirely natural/low-intervention, split across a two-page menu with illustrations of the producers' vineyards. The by-the-glass program runs 12 wines at any time (£7–12 per glass). House favourites are the Radikon skin-contact from Friuli, the La Stoppa Ageno from Emilia-Romagna, and a Cheshire producer (A&B Vineyard, 30 minutes east) that is the only English natural wine on the list.

The 14-seat bar counter is the reason to come alone — the pass is open, the chefs will chat during lulls, and the wine-by-the-glass rotation keeps every solo dinner different. Two-tops at the wall need 3 days advance booking; the bar is walk-in.
