The Verdict

Kaanan at the Oberoi Sukhvilas Resort & Spa is not, strictly speaking, a Chandigarh restaurant — the resort sits thirty kilometres north of the city in New Chandigarh, at the edge of the Shivalik range where the Punjab plains meet the sub-Himalayan foothills. But for Chandigarh residents and visitors, it is the most significant fine-dining destination within the city's orbit, and it occupies a category entirely its own.

The restaurant is set among the resort's sal forest, with tables positioned to face the treeline and, in certain seats, the blue distance of the foothills. The cooking is Indian fine dining in the Oberoi tradition — classical Indian technique applied to exceptional ingredients, with a menu that changes seasonally and an approach that draws on the diverse regional traditions of the subcontinent rather than settling for a generic "North Indian" register.

The signature preparations include slow-cooked short rib with Rajasthani spicing, a pressed duck preparation with Kerala coconut curry, and a vegetarian tasting menu that demonstrates the Oberoi kitchen's command of Indian vegetable cookery. The dessert programme is serious and unusual — malai kulfi reimagined as a fine-dining preparation, regional Indian sweets given a contemporary presentation.

Pricing: INR 3,500 to 6,000 per person with wine. The full tasting menu is INR 4,800. Transport from central Chandigarh: forty-five minutes.

Why It Works for Proposal

A proposal dinner at Kaanan requires planning — the drive, the forest setting, the Oberoi's choreographed arrival ritual — but the effort creates something that a city-centre restaurant cannot: the sense of having escaped the ordinary entirely. The forest view, the fading light over the Shivalik hills, and a kitchen at this level create the conditions for a genuinely memorable evening.
