Top Deck Cave Restaurant

Top Deck Cave Restaurant is a tiny eight-table kitchen carved into the cliff face behind Göreme's main square — run personally by chef-owner Mustafa Uzun, one of the village's most famous cooks, and widely considered the most authentic traditional Turkish restaurant in all of Cappadocia. The restaurant is a Tripadvisor Travellers' Choice winner and regularly ranks in the top five of Göreme on every aggregator that lists Cappadocia.

The menu is the Cappadocian canon, cooked by one man. The testi kebab — clay-pot lamb stew sealed and smashed tableside — is Mustafa's signature and the benchmark version in the village. A slow-braised okra in lamb broth; a manti dumpling plate with garlic yoğurt; a charcoal-grilled quail with pomegranate molasses; stuffed vine leaves with Cappadocian rice and sour cherries. Everything is made from scratch on the day.

The wine list is short — three Cappadocian reds (Kocabağ Öküzgözü, Turasan's Emir white, Kayra Karasakız), a few international beers, and home-made ayran. Tea is served in small silver-rimmed glasses after the meal; the after-dinner regional digestif (salep or sahlab in cold months) arrives without charge.

The eight tables are set across two adjoining rock-cut alcoves, lit with soft lanterns. Mustafa typically greets every guest personally and, over three visits, will remember names, order histories, and the cities his regulars fly in from. The restaurant closes Mondays entirely; mid-winter service is Wednesday through Sunday.
