About The Ambrette

The Ambrette is Dev Biswal's Canterbury fine-dining restaurant — a modern Indian kitchen with an Odia (eastern Indian) foundation, set in a narrow Tudor townhouse on Beer Cart Lane, two minutes from Canterbury Cathedral. Biswal trained in classical Indian kitchens before moving to British fine dining, and The Ambrette has operated as his personal project since 2009.

The cooking is fusion in the best sense — Indian spicing, local British ingredients and European technique applied in equal measure. A tandoor-roasted Romney lamb chop with a cardamom-and-mint reduction is a signature; a Kentish venison shank slow-cooked in a Bengali jus with pickled blackberries has been the autumn main for several seasons; a wild-mushroom-and-truffle kichari runs in winter.

The wine list is deliberately designed to pair across spice levels — a strong German Riesling section, Alsace Pinot Gris, robust Rhône whites and a handful of English sparklings. The six-course tasting menu (£55) is the way in for first-time diners; the à la carte is comprehensive and handles larger groups well.

The dining room is narrow and intimate — thirty-six covers across two interconnected rooms — with exposed Tudor beams and a subtly spiced atmosphere from the tandoor work at the back. Service is warm, knowledgeable, and unhurried. Biswal often works the floor personally on weekends.
