About Pavillon Steak House
Pavillon Steak House occupies a faithful 1995 reconstruction of the 1925 Zeman Café — one of the first strictly Functionalist buildings in Czechoslovakia, designed by Brno-born architect Bohuslav Fuchs on the centenary of whose birth the reconstruction was opened. The setting is the Koliště park near Janáček Theatre; the building is itself a reason to book a table, all curved glass, white walls, cantilevered terrace, and the 1920s modernist architecture that made Brno's name in twentieth-century design history.
The cooking is steak-forward modern European. Chef Lukáš Mašek runs a traditional grill-and-butchery operation that sources Czech Angus from the Vysočina highlands and dry-ages in-house for thirty to forty days. The tomahawk-for-two (1.2 kg) and the picanha (Brazilian cut, a Central European rarity) are the house specialties; sides run classical — creamed spinach, bone-marrow bordelaise, truffled mashed potatoes. A seven-course tasting menu offers a broader expression for parties not set on the grill.
The wine list is serious for steak — an Argentinian Malbec section alongside proper Bordeaux coverage, a careful California page, and the Moravian reds (Frankovka, André, Pinot Noir) that deserve more respect than they get. The pairing option is only available with the tasting menu.
The terrace, open from April to September, is the most coveted outdoor dining seat in Brno — twelve tables wrapping the curved Functionalist frontage, looking out over Koliště park. Reservations for terrace dining in summer need to be made a week ahead; interior booking is easier. The room holds a hundred and sixty across the main dining hall and the private upstairs gallery, which makes it one of the few rooms in the city capable of hosting forty-plus group dinners.
