Prego Ristorante Italiano

Prego Ristorante Italiano is the flagship dining room of Discovery Shores Boracay, one of the two or three most polished resorts on the island, at the quieter northern end of Station 1 where the beach widens and the crowd thins. The restaurant occupies an open-air terrace directly on the sand, with a sunset-facing orientation that makes the 17:30 seating the most sought-after dinner window on the beach. The kitchen runs Italian with seafood leaning — a logical choice for a beach resort — and the quality is the highest of any pure-Italian room in the Visayas.

Signatures include a hand-rolled tagliolini with Palawan prawns and bisque cream, a grilled catch-of-the-day (usually lapu-lapu or tanigue) with salsa verde and capers, a truffle risotto with local shiitake that the kitchen does not over-season, and a seared Wagyu tenderloin with gorgonzola. The pizza section is rested 72 hours and fired in a wood oven — genuinely excellent. The desserts lean classical; the hazelnut semifreddo is the standout.

The wine list runs to 180 references with a properly deep Italian section (Barolo, Brunello, Amarone) and a small-production Australian white selection that handles seafood well. Cocktails are beach-appropriate; the house calamansi margarita is the clear sunset standard. Service is the most polished on the island — senior Filipino captains who rotate through the best Manila and Cebu hotels.

Dinner only; the sunset window (17:30–19:00) is the defining booking. Allow 2.5 hours for the full tasting menu. Bare feet accepted on the sand tables; smart casual required on the terrace.

Prego at Discovery Shores is the proposal room on Boracay. The toes-in-sand beach tables at sunset, with the sky turning orange over the Sulu Sea and dinner service pacing to match, is the single most cinematic proposal setting in the Philippines outside of Amanpulo. Book 14 days out and request the corner sand tables (S1 or S2) — they are furthest from the beach-path foot traffic. The staff can arrange a private sand-circle table with candles and a ring presentation if requested in writing when booking. For first dates the beach-path tables work equally well at less intensity.
