The space is remarkable. Cowie's design layers deep jewel tones against the Tower's original architectural bones — dark lacquered panels, banquette seating in plush velvet, a stage positioned at the head of the room so that the performer commands the space without competing with the table's conversation. A custom-designed glass wine display case rises along one wall, housing a curated selection that tilts toward Champagne and Burgundy for obvious reasons. The lighting has been calibrated to flatter. The menu is New American with a classicist's instinct for the ceremonial.
