About Etxanobe Atelier

Fernando Canales is one of Bilbao's most respected chefs, a veteran of the original Etxanobe at the Euskalduna Palace, which he ran for more than a decade with a Michelin star. In 2018, he moved the operation downtown, restructured it into a two-concept venue — the formal Atelier and the adjacent Palacio bistro — and regained the star in 2019. The dining room, designed by Barcelona studio El Equipo Creativo, is one of the most considered restaurant interiors in northern Spain: brass inlays, walnut panelling, a lacquered vault ceiling.

Canales's cooking is classical Basque reoriented around modern technique. Signatures include a black-ink squid pasta with a single violet flower, a roasted guinea hen in a pool of its own jus thickened with sobrasada, and a dessert of chocolate in four textures that has been on the menu for twenty years. The tasting menus (€95 for four courses, €165 for eight) are supplemented by an à la carte that rewards repeat visits.

The private chef's table at the rear, seating eight, opens directly onto the kitchen pass and is the city's most elegant setting for a small milestone birthday or a top-team dinner. Service is led by Mikel Population, one of the most experienced sommeliers in the Basque Country.

The wine list is 450 references deep, with a particular focus on Rioja (both sides) and a rotating small selection of global curiosities. The pairing is better than average for the price point.
