Bungo Yamaichi is a wagyu-focused kaiseki ryotei in central Beppu, three blocks south of Beppu Station, run by the third generation of a family that has worked exclusively with Bungo-gyu. The Oita Prefecture-raised black wagyu. Since 1971. The restaurant is the city's clearest answer to 'where would a serious wagyu-kaiseki dinner exist in Oita' and is the most-recommended single fine-dining address in the prefecture.
A typical seven-course meal: a small hassun of seasonal Oita small dishes; a clear soup with seasonal mushroom and tofu; a sashimi course of Bungo-Bay yellowtail and Saiki-coast flounder; the Bungo-gyu centre. Your choice of sumibiyaki, shabu-shabu, or sukiyaki. Accompanied by grated daikon and house ponzu; a rice course of takikomi-gohan with mountain vegetables from the Yufu valleys; and a small wagashi sweet to close. The course runs ¥18,000-26,000 depending on the wagyu grade.
The room is built in formal kaiseki style. Pale tatami floors, low zataku tables with leg wells, shoji panels onto a small inner garden with a single Japanese maple, kimonoed staff. Capacity is thirty across the main hall plus four private rooms (the largest seats twelve) used for business and family gatherings. Reservations are taken by phone in Japanese a week or two ahead.
