About Salice Blu

Salice Blu is the chef-driven Michelin-starred dining room of Luigi Gandola. Opened in 1998 on Via Roma in the medieval centre of Bellagio, awarded one Michelin star in 2017, and held continuously since. The room is built into a converted 18th-century townhouse with stone-vaulted ceilings, hand-carved larch beams, a single open kitchen at the back wall, and forty-two covers across twelve tables.

Gandola's cuisine is contemporary Italian with deep Lariano (Lake Como) regional sourcing. Signatures include a hand-rolled tagliolino with Lake Como char and Mantua pumpkin; a slow-cooked Lariano lamb shoulder with juniper jus and braised endive; a smoked Lake Como agone with horseradish butter; a wood-fired Lake Como missoltino (the salted-and-dried-fish regional preparation) with green olive; the famous 'risotto al pesce persico'. A Lake Como perch risotto that Gandola has refined for over twenty years.

The wine list runs to 700 references with a serious Lombardian spine. Deep coverage of Franciacorta sparkling (Bellavista, Ca' del Bosco, Mosnel), Valtellina Nebbiolo (Ar.Pe.Pe, Nino Negri), and a respectable Italian-national section. Sommelier Federico Visin runs the floor and the by-the-glass programme runs a generous twelve-glass Lombardian flight.

Service is genuinely small-team. Three captains rotate the room, Gandola himself runs the open kitchen and walks the room before the cheese course, and the kitchen pacing is leisurely. Salice Blu is the dining room that visiting Milanese, Lake Como villa-owners, and serious wine-led diners use as a default address. The room has hosted a generation of regional food and wine industry dinners across two decades.

Salice Blu is the easy-first-date room in Bellagio. Quieter than Mistral, less formal than the village brasseries, and chef-driven enough to be a meaningful conversation starter.
