Benguerra Island is the second-largest in the archipelago and home to one of Mozambique's most celebrated lodges. The dining room — open-sided, thatched, positioned directly on a beach of white coral sand — is the kind of setting that makes the word 'restaurant' feel inadequate.

The Benguerra kitchen cooks with the produce of the channel and the lodge's own garden. Freshly caught fish — whatever the dhow brought in that afternoon — is prepared simply: grilled with lime and herbs, served with rice and seasonal vegetables. The simplicity is the strength.

The house cocktail — a gin and tonic made with fresh herbs from the garden and garnished with a slice of starfruit — is the correct beginning. It arrives at the right moment, with the sun still high enough to illuminate the channel's impossible turquoise colour.

Benguerra operates on a fully-inclusive basis, which means the dining experience extends through all meals and the snorkelling trip lunch served on a sandbank that appears at low tide. The sandbank picnic is the lodge's signature experience and one of the Indian Ocean's most absurd pleasures.
