The Verdict

Chef's Table sits on the sixty-first floor of the Lebua at State Tower, accessed by a private elevator from the hotel lobby. The dining room is glass on three sides, looking south over the curve of the Chao Phraya as it bends through the city, with the lights of Thonburi spreading out to the western horizon. There is no view in Bangkok fine dining that competes with it. The risk of a view-driven restaurant is that the kitchen ends up as backdrop. Chef Vincent Thierry — formerly of Caprice in Hong Kong, where he held three Michelin stars — has ensured this is not the case.

The cuisine is contemporary French with the technical rigour of a chef who has spent his career in three-star kitchens. The signature opens with a series of amuse-bouches that draw on Thai produce: a single grilled river prawn, a green-chilli granita, a delicate spring roll constructed from rice paper and a confit duck filling. The mains return to classical French — Anjou pigeon, Brittany blue lobster, a textbook Bresse chicken — executed with the precision the price commands. The pastry programme under the Lebua's pastry chef is one of the finest in the city.

The wine list is exceptional, with a serious Burgundy section that has been built up over twenty years and a strong showing of Champagne suited to the celebratory occasions the room attracts. From ฿9,800 the price is among the highest in Bangkok — but the combination of view, Michelin recognition, and the flawless service from the Lebua's banquet team produces an experience that has consistently been ranked one of the most memorable dining experiences in Asia.

Chef's Table is the address in Bangkok for the proposal that needs to be unforgettable. The hotel will arrange a window table at sunset, a private dessert with the message of your choice, and discrete photography on request. For a birthday of significance, no Bangkok room is more dramatic. For impressing a client visiting the city — particularly an international client who has not been to Bangkok before — the view does diplomatic work that nothing on the menu could.
