The tasting menu changes weekly based on what the farms and markets supply, and the kitchen processes every ingredient to minimise waste. The result is food that tastes simultaneously of a specific moment and of a deep tradition: the flavours are unmistakably Thai, the technique is historically grounded, and the provenance of every element is traceable.
The Michelin star arrived in recognition of what Bo.Lan's regulars had understood for years: that this kitchen produces Thai food that tastes more like the tradition the recipes were developed from than most other restaurants in the country. The Ekkamai location, in a heritage Thai house, provides a setting that reinforces the philosophy. The wine and natural wine list is curated to complement the cuisine rather than compete with it.
