Kubu at Mandapa was named the best fine dining restaurant in Bali's Best Awards 2025 — a recognition that confirmed what those who had made the journey to Kedewatan already knew. The restaurant consists of nine individual bamboo dining cocoons, each suspended over the Ayung River gorge on the grounds of the Mandapa Ritz-Carlton Reserve. There are no shared dining spaces, no adjacent tables, no ambient noise except the river moving below. Each cocoon is a private room for two to four guests.
The menu is French-Mediterranean in its classical references and Balinese in its ingredient sourcing. Chef Didier Poncelet has spent time in the kitchens of several acclaimed European restaurants and brings a preparation discipline that produces dishes of genuine technical precision: a carpaccio of Lombok tuna with Balinese sea salt and kaffir lime oil; a braised lamb shoulder from North Bali with a rosemary jus prepared over four hours; a dessert of dark chocolate with a torch ginger granita and Luwak coffee cream. The tasting menu runs seven courses, with optional wine pairing from a list that carries genuine Burgundy and Champagne.
The pre-dinner experience begins at sunset — guests are shown to a private riverside terrace for Champagne aperitifs before descending by torchlight to their cocoon. The visual effect of arriving to a candlelit bamboo room above a jungle gorge is designed to precede the food entirely. The food is better than it needs to be given the architecture, and that is the restaurant's genuine achievement.
Reservations at Kubu require advance planning. Non-Mandapa guests are accommodated alongside hotel residents, and availability is limited by the nine-cocoon structure. Request cocoon positions closest to the river for the strongest acoustic experience.
Best Occasion Fit
