The Room
Il Ristorante by Niko Romito occupies a cliff-edge dining room at the Bulgari Resort Bali in Uluwatu, on the southern Bukit peninsula. The room sits 150 metres above the ocean with floor-to-ceiling glass on three sides giving an unbroken view of the Indian Ocean. Niko Romito. The dining room seats 80 across the main floor. Service is brigade-Italian, formal but warm. The booking window is four to six weeks ahead through the Bulgari concierge; non-resort guests can book but should mention the dinner-only timing.
The Food
The kitchen runs Romito's modern-Italian playbook. The Italian classics treated with a contemporary lightness, with serious sourcing from Italy combined with carefully chosen Indonesian ingredients. Signature courses include the focaccia con-pomodoro, the spaghetti in cream of grana, the carrè di agnello al sale, and the absolute, the chef's signature dessert.
Wine programme is Italian-led with serious Tuscan and Piedmontese benches alongside Bordeaux and Champagne. Cocktails before the meal at the Bvlgari Bar Bali.
