Chef Nic Vanderbeeken (formerly of three-star Hof van Cleve in Belgium) runs a five-course and seven-course tasting menu that walks a careful line between European fine-dining technique and tropical-ingredient celebration — yellowfin crudo with green papaya and serrano, suckling pig confit with smoked tamarillo, an Ubud heirloom cocoa dessert that closes the menu with theatrical restraint.
Service is calm, deeply read, and bilingual. The team can coordinate proposal flowers, photographer cues, and a bottle of vintage Champagne held below the table for the moment. The wine cellar is deeper than the room would suggest — strong Burgundy, German Riesling for the spice courses, and a serious dessert-wine programme.
Bookings open four weeks ahead via the Viceroy concierge or the resort's website. Sunset seating begins at 6 PM in dry season; the room is exquisite at any hour but most photographed in the half-hour before dark. Dress is smart — long-sleeve shirts and closed shoes are appreciated.
