About Sahil Restaurant
Sahil occupies one of the restored 12th-century caravanserai buildings inside the UNESCO-listed Walled City of Baku, a two-minute walk from the Maiden Tower. The dining room is the original stone-vaulted courtyard — open to the sky in summer, retractably roofed in winter — with low tables, carpeted benches along the walls, and a traditional tar player who performs during dinner service. For most visitors this is the defining Azerbaijani dining experience of a trip.
The menu is traditional Azerbaijani without compromise. The plov section alone runs to six different preparations (lamb with dried fruits, saffron chicken, chestnut with smoked butter, vegetable); the kebab section includes the notably good lyulya (minced lamb) and the pomegranate-glazed lamb cutlets; the dolma (stuffed vine leaves) and dushbara (dumpling soup) are both prepared to the classical standard. The signature table dish is the saj — a wrought-iron platter brought flaming to the table with mixed meats, vegetables, and flatbreads.
The wine list includes a proper Azerbaijani selection (Ivanovka, Chabiant, Savalan) alongside Georgian imports (Mukuzani, Saperavi). The house cocktail of pomegranate molasses, lemon, and local brandy is a proper pre-dinner start. Service is warm and unhurried in the traditional caravanserai manner; allocate 2.5 hours for a full dinner sequence.
Lunch and dinner seven days. The courtyard seating is best in the spring and autumn shoulder weeks (April–May, September–October); the winter roof-covered setup is still atmospheric.
Why It's Perfect for First Date
Sahil is the first-date room in Baku. The caravanserai setting under stone arches with live tar music is the single most atmospheric dining space in Azerbaijan, and the traditional menu gives a first date plenty to talk about — most Azerbaijani dishes are unfamiliar to international visitors and the ordering conversation is itself a pleasant prelude. Book the wall-bench tables (most intimate) rather than the central courtyard floor. For birthdays and team dinners the central tables handle groups of 6–10 without difficulty.
