The restaurant has built its reputation among Ashgabat-resident families and visiting Central-Asian-cuisine enthusiasts as the city's reference single plov destination. A casual format that emphasises the cooking-as-experience visual element.

The signature is the Turkmen Palaw at $8. The rich-and-fragrant lamb-and-rice pilaf cooked in a single huge cast-iron kazan over slow fire in the open kitchen, with diners able to watch the cooking process from the open dining hall. The portion is generous (the kitchen serves the standard Turkmen 250g portion) and the rice is cooked to the proper Turkmen consistency (slightly oilier and more aromatic than the Uzbek versions). The premium Palaw with extra lamb runs $12.

Beyond plov, the kitchen serves a small Turkmen menu. Manty ($6 for six), Shashlik ($3 per skewer), Dograma ($8), and a small selection of Turkmen flatbreads and salads. Most regulars order plov-and-bread-and-tea for lunch and the bill rarely exceeds $12 per person.

The room is functional Turkmen-cafeteria style. Eighty seats across a single ground-floor open dining hall with low communal tables, white-tiled walls, the open kitchen and the huge plov ovens visible at the front of the shop, fluorescent lighting, paper menus. Walk-ins outside the 1-3pm lunch peak (the genuine Turkmenistan peak meal hour) work; the queue at peak runs ten to twenty minutes. Cash is preferred but cards are accepted.
