About Zilte

Viki Geunes opened Zilte in 1996 with his wife Viviane Plaquet, earned his first Michelin star in 2004, and took the third in 2021. Since 2012 the restaurant has occupied the top floor of the MAS museum in the Eilandje docklands, with the river Scheldt and the old port spread out below the windows. It is the only three-star kitchen in Antwerp, a Relais & Châteaux house, and a member of Les Grandes Tables du Monde. Dinner is a single tasting menu that runs three to four hours. The Kitchen

Geunes trained as an industrial engineer before teaching himself to cook, and the precision shows. Fish, crustaceans and shellfish form the spine of the menu: the signature plate is a langoustine with sea-urchin tempura, hearts of palm, celery cream and a mandarin-flavoured miso, a dish that has followed him for years. The Pure Zilte tasting menu is €270 for seven courses and €330 for nine, with a vegetarian version cooked to the same standard. The Room

The dining room is a glass box at the top of the MAS, low-lit at night so the river does the talking. Tables are generously spaced, the sound level stays at an easy hum, and the kitchen is visible without being a stage. Dress is smart; jackets are common but not required. With around forty seats and one main seating, the room never feels rushed once you are in it. Ask for a window table when you book.
