About Chayote Chef Restaurant
Chayote sits at the eastern end of Lara Beach inside the five-star Nirvana Cosmopolitan, but it is emphatically not a hotel restaurant in the conventional sense. The kitchen operates as an independent fine-dining room, branded under Chef Ali Ronay's name, and is the only restaurant in Antalya to have declared a hard editorial line: every dish on the menu draws from Turkish culinary tradition, reimagined in haute cuisine form. The restaurant was included in the 2024 Michelin Turkey Guide as a Recommended restaurant on that basis.
The menu is structured as a regional journey — the tasting progresses from an Aegean opener (sea bream ceviche with mastic gum), through a Central Anatolian main (braised lamb shoulder with bulgur), to a Black Sea dessert (muhlama reimagined as a savoury-sweet finale). The kitchen is confident enough to cook the unfashionable regional cuisines — Erzurum, Edirne, Hakkari — that even Istanbul's fine-dining rooms mostly avoid. The result is one of the most intellectually ambitious menus in Turkey.
The dining room is set in a garden pavilion on the Nirvana property, with a wood-beamed ceiling, a private garden terrace, and views east towards the Bey mountains. Service is led by sommelier-director Can Şen, and the wine list emphasises Turkish producers with a focus on indigenous grapes (Kalecik Karası, Öküzgözü, Boğazkere, Emir). Chayote is the kitchen of choice for serious food writers visiting Antalya.
The tasting menu is ₺2,400 for five courses, ₺3,500 for eight, pairings +₺1,100. Lunch is offered as a shorter three-course set at ₺1,600. Private dining is available in the garden pavilion's wine cellar for groups of up to 12.

Chayote is the Antalya impress-clients dinner for any guest who is food-literate or who wants to be shown Turkey rather than an internationalised version of it. The all-Turkish declaration is the pitch: you are showing the client a serious kitchen taking its own culinary tradition at face value. Private dining in the wine cellar seats 12 and is the best private room on the Turkish Mediterranean.
