Fleming's Prime Steakhouse & Wine Bar opened its Anaheim location at 1050 West Katella Avenue in 2024, and it quickly established itself as the convention-circuit power dining room that the Katella corridor had been lacking. The Fleming's formula is reliable in the best sense: USDA Prime beef aged to specification, a wine program built around their signature "100 by the Glass" offering — a rotating selection of 100 wines available by the glass at any given time — and a service culture that has been trained to execute without friction. The dining room is warm without being pretentious, formal without demanding dress code compliance. Signature dishes lean toward the steakhouse classics executed with precision. The Prime New York Strip arrives with a perfectly caramelized crust. The Bone-In Filet Mignon is the order for those who want structure and tenderness in the same cut. The lobster mac and cheese side — a Fleming's institution — is large enough to be its own course. The bar program runs deep on American whiskey and California Cabernet, both well-suited to the convention-season corporate entertainment crowd that fills the dining room from Tuesday through Thursday.
The Anaheim location also features private dining for groups of up to 30, making it the most accessible large-group fine dining option on the Katella Avenue corridor. The room is equipped for presentations and has been used by more than one company for the dinner that precedes the morning's contract review.

Fleming's on Katella is the convention dinner that executes without surprises. The proximity to the Anaheim Convention Center — a five-minute walk from most convention hotels — eliminates the logistical friction that derails dinner plans during busy trade weeks. The 100-wine-by-the-glass program means the client who cares about wine is satisfied without requiring a formal sommelier consultation. The private room handles the group that needs privacy for a sensitive conversation.
For birthdays, the Fleming's program is thoughtful: the kitchen accommodates pre-arranged dessert presentations, and the bar program's range — from light California whites to full-bodied Napa Cabernets — means the table's diverse palates are served equally. The Harbor Boulevard Ruth's Chris is the only steakhouse that competes directly for birthday business in this price range.
