Tama is the signature restaurant of Habitas AlUla, the design-forward tented resort in the Ashar Valley that positioned itself, from opening in 2021, as the most architecturally serious place to sleep in Saudi Arabia. The dining room is perched above the infinity pool and framed by the valley's sandstone outcrops; at sunset the light works on the rock the way nothing else in the region quite matches.
The cooking follows what the kitchen calls the 'spice route' concept — dishes built around the spices that travelled through Arabia on the overland incense and pepper trades between the Indian subcontinent and the Mediterranean. You will find cardamom in the lamb, sumac on the sea bream, black limes in the vegetable broths, and mastic in the desserts. The menu is deliberately legible to an international palate; this is not a private kitchen of a Saudi family but a designed culinary experience built to be the in-house flagship of a resort.
The service is quiet and the pacing unhurried. Dinner runs around two and a half hours. The wine list is non-existent (again, Saudi Arabia is dry), but the tea and karak-coffee programme is extensive and the house-made ferments — shrubs, infusions, muhallebi-based drinks — stand in with real conviction.

For a proposal in AlUla, the answer is Tama at sunset on one of the pool-side tables with the canyon view, arranged through the resort's concierge at least a week in advance. The staff will decorate discreetly on request. The acoustics are intimate, the light theatrical, and the privacy — the outdoor tables are well separated — is total.
