Saffron is Banyan Tree's group-wide signature Thai restaurant, operated at every major Banyan Tree resort from Phuket to Bintan to Lijiang, and now at AlUla in the Ashar Valley. The cooking is the same Bangkok-trained brigade standard across the group — full-flavoured royal Thai cooking with serious attention to the spice paste work.
The AlUla dining room is architecturally the most beautiful restaurant at the resort — a long glass-fronted pavilion facing the sandstone cliffs, with teak panelling and low copper lamps that deliberately evoke the group's Thai roots while respecting the desert palette. The service is Banyan Tree's international standard: quiet, precise, warmly personal once you return for a second visit.
The menu is stable across the group: gaeng phet pet yang (red curry of roasted duck), massaman of short rib, pla neung manao (steamed sea bass with chilli-lime dressing), pad thai goong (tiger prawn pad thai). The ingredients are flown in from Thailand three times a week. The spice levels are genuine rather than muted — the kitchen expects a Gulf clientele that eats spicy food routinely and does not under-season for the tourist palate.
Why it works for First Date
For a first date — or a second night with a partner during a multi-day AlUla trip — Saffron is the correct answer. The room is romantic without being theatrical. The Thai cuisine is a conversational gift; there is more to discuss than Arabian food, which is the daily default throughout the trip. And the consistency of the Banyan Tree kitchen means the evening will not trip over its own ambition.
