Peshawri is ITC Hotels' signature Northwest Frontier restaurant — the same brand you know from Bukhara in Delhi, replicated here with absolute fidelity to the Agra room. The ITC Mughal itself is the heritage sister property of the Oberoi Amarvilas on Fatehabad Road, and the restaurant has been refining its single short menu since the hotel opened in 1976.
The cooking comes from the tribal cuisines of the Northwest Frontier Province — the region that now straddles Afghanistan, Pakistan's Khyber Pakhtunkhwa, and Indian Punjab. The signature dishes are the Dal Bukhara (black lentils slow-cooked for eighteen hours over dying charcoal), the Sikandari Raan (a whole leg of lamb marinated for twenty-four hours and then roasted in the tandoor until it falls from the bone), the Kakori kebab (a silken mince kebab from the Awadhi tradition), and the Peshawri naan studded with nuts and dried fruit.
Diners eat with their hands in the tribal style — cutlery is provided but politely forgotten once guests understand the convention. The table settings are bronze thalis and wooden bowls. The service is warm rather than formal, which is precisely correct for the cuisine. At roughly ₹6,500 per person for the full signature spread, Peshawri is one of the best-value fine-dining experiences anywhere in northern India.
