Head-to-Head · Tulum
Arca vs Humo
Two fire-cooked Tulum tables: book Arca on the jungle road for the big night, Humo in the centro for a lower-key dinner.
The Verdict
Arca has anchored Tulum's beach-road dining since 2015. Chef Jose Luis Hinostroza, who cooked at Noma and Alinea before opening here, builds a contemporary Mexican menu around an open wood fire, with plates like roasted bone marrow and crispy oxtail carnitas. The open-air room on the Carretera Tulum-Boca Paila ranked No.28 on Latin America's 50 Best in 2023, and its bar has reached the North America's 50 Best Bars list. This is the destination, scene-setting choice, booked through OpenTable. It scores 9 for food, 9 for the room, and 7 for value.
Humo, whose name means smoke, cooks contemporary Mexican over wood in Tulum Centro on Avenida Tulum, away from the beach-road crowd. The room is built on Mayan-garden bioarchitecture, open and green, and the menu leans hard into the live fire that gives the place its name. It is the lower-key, more local-feeling of the two, reserved through Resy and easier to land on shorter notice. It scores 8 for food, 8 for the room, and 7 for value.

Price Comparison
They sit close, with Arca a notch higher for the setting and the bar program. At Arca, a dinner of fire-cooked plates with a cocktail or two lands somewhere around 80 to 120 dollars a head once the bar is in play. Humo runs a touch gentler, closer to 60 to 90 dollars for a similar spread, in part because it is away from the beach-road premium. Both are splurges by local standards. How to Book
Arca books through OpenTable and fills fast in high season, roughly November through April, so reserve well ahead for a beach-road evening and arrive early for a drink at the bar. Humo takes reservations on Resy and is the easier of the two to land closer in, though weekend tables still go.
