About W Kitchen

W Kitchen is the signature restaurant of the W Verbier — the W Hotels brand's most architecturally ambitious mountain property, opened in 2013, occupying a glass-and-stone chalet at the top of the Place Centrale and the only major-brand five-star hotel in the village. Sergi Arola — the Catalan two-Michelin-star chef from Madrid — consults on the menu, which is the most internationally-oriented of any Verbier dining room.

The cuisine is brasserie-format but built on serious produce. Headline plates rotate but the canon includes a slow-roasted Anjou pigeon with mole and corn polenta; a hand-rolled cavatelli with Iberian black-pork and Manchego; a Lake Geneva fera with pickled vegetables and lemon-olive emulsion; a dry-aged Charolais tomahawk for the table; and the famous 'patatas bravas Sergi Arola' that the W carried over from Arola's Madrid programme.

The room is dramatic — sixty-five covers in a double-height glass-walled chalet space, a single open-flame grill at the centre of the open kitchen, and a counter for solo or two-top dining that runs the length of the room. After 21:00 in peak weeks, the room shifts toward après-ski volume — DJ booth on the mezzanine, cocktail programme that runs the village's headline list, and a clientele that mixes serious skiers with private-jet weekenders. Service is W-precise: black aprons, choreographed plate-arrival, fast pacing.

The wine list runs to 600 references with a strong Spanish and Italian section reflecting Arola's pairing preferences, and a Champagne cellar that runs a serious by-the-glass programme with Krug, Cristal and Salon all available in single pours. The cocktail bar is genuinely interesting — head bartender Ezekiel Mota worked the W New York and brings a New York speakeasy sensibility to a chalet hotel that is almost the opposite. It is the most theatrical drink-and-dinner room in Verbier.

W Kitchen is the birthday-night room in Verbier when the dinner needs to feel like an event rather than a tasting menu. The room's volume is celebratory; the open kitchen gives a chef's-table feel from any seat; the Champagne-by-the-glass programme makes a six-glass dinner at a friendly cost. Book the long banquette table at the back for a group of six; ask Ezekiel for the off-menu Verbier-themed cocktail flight as an opener.
