Estro Vino e Cucina opened in 2014 in a section of Dorsoduro that sits comfortably off the main tourist routes, in the neighbourhood around the Campo San Barnaba that has a student and local character different from the pressure-tested tourism of the Rialto and San Marco. The Spezzamonte brothers built the room with recycled materials from Venice's own fabric — tables made from briccola, the wooden poles that mark navigable channels in the lagoon; a bar counter constructed from the balconies of buildings on the Grand Canal — and the design communicates that what is happening here is about Venice in a way that most new restaurants in the city cannot claim.
The wine list runs to over 700 labels, focused on natural and biodynamic producers from across Europe, and it is selected with a knowledge and conviction that the best wine bars in Paris and London would recognise. The food is seasonal small plates that treat Venetian traditions as a starting point rather than a constraint: cured fish with unexpected acidities, vegetable preparations that observe what the Rialto market has delivered, cheese selections that complement the wine without competing with it.
